The coffee brand, started by brothers Jerad and Justin Morrison, has five locations in San Francisco and supplies retailers and restaurants including Chez Panisse and Whole Foods. The Los Angeles cafe will feature a large coffee bar and counter where you can order V60 pour-over coffee, cold coffee on tap and espresso drinks. The brothers will be roasting coffee at the facility using two s, German-engineered roasters they had refurbished for the shop.
They also will be making their cold coffee using a proprietary method that involves brewing the coffee hot and then rapidly cooling it, rather than cold brewing. While the other Sightglass locations serve snacks and pastries made off-site, the Los Angeles cafe will have a full kitchen with breakfast, lunch and dinner.
Brett Cooper, who was previously the chef at Aster and Outerlands in San Francisco, will be baking bread and pastries and making salads, Roman-inspired pizzas and other seasonal dishes. Our company takes its name from the 'sightglass,' the viewing window on our vintage PROBAT coffee roaster that exposes the complex and delicate process of roasting coffee. We believe that knowing the story behind your coffee—where it was grown, how it was processed, and who handled it along the way—is a powerful link from the cup to the wider world.
Ultimately, we aim to deliver the highest quality achievable in all aspects of our business, whether that be sourcing the most beautiful and wondrous coffees attainable or employing the most mindful and quality-focused practices possible.
Sourcing green coffee is at the heart of what we do at Sightglass. The three part blend has a base of two seasonally rotating Central and South American coffees, complemented by a carefully selected dry-processed Ethiopian. With a lively, full-bodied sweetness, clean candy-like fruit flavors, and an elegant lingering finish, this espresso is consistently a crowd-pleaser. About Sightglass Coffee Roasters Sightglass began as an aspiration to source, produce, and share distinctive, quality-focused coffees.
